Not just because it was given by John Stein, celebrity chef Rick Stein's brother, but because it showed the effects of nutrition on a neurological level.
There must certainly be a lot more medical jargon to his study but he pared it down to a level where everyone could understand.
I found a podcast of him explaining this, so watch it for a proper explanation but essentially this is what he was saying.
- Our brains work because of nerve cells.
- How well they work depends on how well these cells are connected to send signals to one another.
- Deficiency in fish oil has shown to affect the cells required for visual and auditory functions.
- In the case of vision, when these connections are impaired, there is weaker control of the eyes.
- Eyes need to converge to focus.
- When there is less control, eyes keep moving and that is why 'DOG' is read as 'GOD'.
