He has been showing me how to make an assortment of braided rolls like these ones. I can pick out any shape or form from his old training guides and he shows me how it is done. It is annoying how his turns out to be perfect every time.
Gragger makes their brioche in the round knot above. It looks like some mensa puzzle and good fun to peel apart when eating. Since I started to bake at Gragger's, I've had to make a lot of them.
